I send the change order, they call and say "fine, do it". Nothing is signed and that is exactly the ticket that ends in a dispute.

Already in the app: open any change order and send a signing link, or sign at the table — two-party signatures, and the signed document is the agreement of record. If something in that flow falls short of what you asked here, say where and this reopens.
